At a time in which we start hearing about culinary design, we can wonder what other subjects between art and food have not yet been explored. The ACF is working on a food design project for the coming months (pictures, film, sculpture, talks, etc...). Taking an interest as cooking trends come and go is not, as you might at first imagine, like watching the legendary coat of paint dry. If you have been around for the last 25 years and an observer, or participant in the world of restaurants, you will already have noted huge movements as cooking styles dramatically alter in the dishes emerging from our leading kitchens.
Marco Pierre White poses back in 1995 as the youngest ever Chef to hold a coveted three Michelin stars. It is what he is posing behind that is so interesting though, a huge pile of pig trotters. Forget the dishes which might emerge now from the kitchens at St.John or any one of the dozens of disciple eateries it has spawned, where the emphasis will be on local and probably cheap, but always tasty, ingredients. Inspired by the renowned Pierre Koffman, Marco is going to stuff this pile with the most delicious and expensive foie gras available to mankind and as many sublime morels as the remaining cavity will house. This is a style of robust French cooking which has always had a huge following and one which will probably, almost certainly, always be with us.

ACF Scotland working together with the French Ambassador's Residence Team

On the 30th of June, HE Maurice Gourdault-Montagne, The French Ambassador, organised a gala dinner at Edinburgh City Hall. Hector Mackenzie, the President of ACF's Scotland Branch came along with his team of students to lend a helping hand to the Residence team, which had made the journey up North for the occasion.
Special mention must also go to Johann Roy, Chef de cuisine at the French Consulate in Edinburgh, as well as Eric Avenier, an active member of ACF Scotland, who was absent at the time the photo was taken.

Escoffier Challenge Scotland Winners
24th June 2010
The 2010 Escoffier Challenge Scotland was a great success. Both winners were really happy with their award, the Scotland Escoffier trophy and a bottle of champagne. Marcin Czubak, 20, of Adobe Restaurant, Glasgow won the student series. Mathew Martin, 25 of Four Seasons Hotel in St Fillans won the professional series.

London and South East region Escoffier Challenge Winners

Mr Laurent Leveille, teaching Chef at the Cordon Bleu School, will represent the London and South region at the UK final of the Escoffier Challenge, to be held in October, in the professional category. Mr Mohammed Saad, Student at Southgate College, will represent the region in the student category.
